Reuters Bolivians mark Holy Week with chili-rich culinary tradition

As in much of the Catholic world, the consumption of red meat is forbidden during Holy Week. In Sucre, Bolivia, however, the restriction has long been transformed into a celebration of ancestral ingredients, centered on ají, the chili pepper that dominates local cuisine.
