Start TODAY: How To Make Al Roker's Egg Bites

In honor of Start TODAY Chief Motivation Officer Al Roker’s 30th ANNIVERSARY at TODAY this week, we’re sharing his go-to egg bites (with a veggie upgrade)! SAVE THIS 🌟

These high-protein breakfast bites are perfect for busy mornings when you need something tasty on-the-go. Pair with toast or fruit for a complete breakfast! 🍳

Makes 6 servings

1 tablespoon avocado oil
1/2 cup diced red pepper
1/2 cup diced yellow onion
1 cup finely chopped kale
2 sausage links, crumbed
1/2 teaspoon paprika
1/2 teaspoon salt
6 large eggs
3/4 cup low-fat cottage cheese
1/2 cup shredded cheddar cheese

1. Preheat oven to 350 F.
2. Heat a large skillet over medium heat. Add the oil, pepper, and onion, and sauté for 2-3 minutes or until the onion is translucent. Add the kale, sausage, paprika and salt to the pan and saute another 8-10 minutes or until sausage is fully cooked.
3. While sausage cooks, add eggs, cottage cheese and cheese to a food processor. Process until smooth.
4. Line muffin with silicon muffin cups or spray each well with cooking spray. Evenly distribute the cooked sausage and veggie mixture between the 12 muffin slots. Then, pour the egg mixture into each muffin cup until it’s about 3/4 full.
5. Bake for 20 minutes or until the egg cups are golden.
